Coffee processing in Costa Rica is highly advanced and can be described as state-of-the-art. Black honey processed is considered the most complex, arduous and difficult process. The long fermentation time (up to 15 days) adds up complexity flavors to the beans, however it is a risky business for coffee farmers due to high risk of over-fermented or mold.
Brunca, located south of Tarrazú, has less altitude overall but produces many stunning coffees. Light aromas stand out, with fragrances similar to orange flowers and coffee jasmine.
